We have a new upgraded menu for our concessions. Some of the new items are NY Strip Steak Sandwich, Garlic & Herb Fish & Chips, Fresh Fried Potato Chips, Jambalaya, Chicken Fingers, Homestyle Chicken Salad Sandwich, Reese’s & Oreo Pies. Spring is finally here and with the beautiful weather Alabama is known for. Here is a great spring salad.
Shrimp & Papaya Salad

Serves 6
1 Lb 26/30 Size Shrimp Peel and Devein.
1 Oz Olive Oil
2 TblsFresh Squeezed Lime Juice
1 Ea Lime Zest Only.
1 Ea Jalapeno Pepper FreshMinced.
1 TspSalt
1 Ea Papaya Peel and Dice.
½ Ea Red Onion Cut into Rings.
2 StalksCelery Slice Thin.
1 BunchWatercress
1 BunchCilantro Whole Leaves
3 Oz Cashews Rough Chop.
Peel and Devein shrimp and cook in steamer or boiling water and cool down rapidly.
Make dressing with olive oil, lime juice, jalapeno, lime zest, salt and pepper.
Cut fruit and vegetables and add to cooked shrimp.
Dress well and adjust seasonings.
Top with cashews.

I can't tell you enough how much everyone raved about the food and service. It was awesome and I was totally pleased with everything! Yes there was plenty of food after all as I tend to start sweating before the need too… buy you handled everything perfectly!
